Pork Tenderloin with Braised Cabbage and Apple

Lean pork fillet roasted and sliced over savoy cabbage braised with just half an apple for sweetness. A proper autumn dinner without the mash.

Serves 4 people
Prep Time 45 minutes

Instructions

1. Preheat the oven to 190C. Sear the seasoned pork in half the oil on all sides, then roast with the sage for 18-20 minutes; rest for 5 minutes. 2. Meanwhile soften the sliced onion in the remaining oil, add the shredded cabbage and grated apple, pour in the stock and braise for 12 minutes. 3. Stir the mustard through the cabbage. 4. Slice the pork thickly and serve over the braised cabbage with the resting juices.

  • 500 g pork tenderloin
  • 1 whole savoy cabbage
  • 1 whole apple
  • 1 whole onion
  • 200 ml chicken stock
  • 1 tbsp wholegrain mustard
  • 2 tbsp olive oil
  • 6 leaves fresh sage
